Spice Islands Marketplace at the Culinary Institute of America
Welcome to the dazzling, dynamically interactive Spice Islands Marketplace at the CIA at Greystone. The Marketplace is a fun, fascinating, and multi-faceted shopping and educational experience that could only come to you from the world's premier culinary college. A visit is not complete without a stop at the Marketplace, with almost 3,000 square feet of retail space to tantalize your senses.
We feature a wide variety of items for the chef, home enthusiast, baker, or student, so gather your wish list for everything food and wine-related, and come prepared to shop! The Marketplace is stocked with cookware, bakeware, kitchen tools and utensils, items for the young chefs in your life, and more than 1,700 cookbook titles—many autographed by the author. Our vast array also features hard-to-get food items, fine chocolate products, and Napa Valley specialties.
While in the store, be sure to visit the Flavor Bar, where you can enjoy unique “Taste Like a Chef” sensory experiences that will give you insight into food ingredients and how a chef uses flavor to create perfectly seasoned dishes and confections. Spend 15 minutes tasting and learning during our video-guided presentation with chef instructor Toni Sakaguchi. This experience is held at noon and 2 pm, and costs $10.00 per person.
A not-to-be-missed Flavor Bar experience is the country's first Oleoteca Villa Campestri, a groundbreaking project that will introduce you to “super-premium” olive oils made from olives harvested at the peak of freshness and flavor. Three oils will be tasted alone and with different food components in this tasting. All oils are available for purchase, bottled to order in a 250ml size. This experience is held at 11am, 3pm, and 5 pm, and costs $15.00 per person.
Lastly, look through the glass adjacent to the Flavor Bar and you will see the Chocolate Laboratory, designed with ideal confectionery-making conditions in mind. This is where the fabulous Greystone Chocolates are handcrafted from premium, single-source chocolate. Learn how chocolate is grown, why some chocolate tastes better than others, and more during a 15 minute video-guided presentation with chef instructor Stephen Durfee. This experience is held at 1 and 4pm, and costs $10 per person.
